and roasted coffee.
Kenya
Coffee Production
Kenya
is one of the finest coffee producers in the world. The Arabica
coffee varieties are produced in the country using the most
sophisticated methods in terms of production techniques, wet
and dry processing and post auction handling and marketing.
The unique climatic conditions and the native volcanic soils
give the Kenya Arabica coffee the excellent body, heavy aroma
and strong flavor with the very little bitterness.
Processing
The Kenyan
coffee is processed mainly by the wet method to ensure the
best quality. The resulting parchment is then sun dried, bagged
and sent to the curing mills. Here the parchment skin is removed
in the hulling process. Thereafter, the coffee beans are sorted
out mechanically into eight separate grades according to size,
weight and shape.
Grading
and Classification
The mechanical
sorting gives eight grades that are as follows:
AA - Large
beans (7.20 mm screen) and is the top grade A
6.80 mm
screen B - 6.20 mm screen. In marketing A and B are put together
and sold as AB.
PB - Rounded
beans usually one in a cherry
C - Smaller
beans than B
E - Elephants.
The largest beans
TT - Any
light coffee blown away from all grades including ears mostly
from elephants.
T - Also
blown away from the main grades. Smaller and lighter than
TT and smaller than C.
These
grades are further, classified into quality 'classes' through
roasting and cupping to result into 10 liquored classes described
as 'fine, fair, to good, fair average quality etc.
Auction
We buy
our coffee from the weekly central auction and only buy the
green beans of coffee grade and 'classes' required by our
customers. After that, the coffee still under goes further
sorting to remove any defective beans prior to packing and
shipment to the export market. Roasting Ideally, Super Gibs
goes for the best class of AA or AB top qualities and carefully
drum roasts the beans ranging from light, medium to dark roast.
Light roasting gives mild and mellow flavors while the dark
roast results in strong flavored full-bodied coffee. Thereafter,
the coffee can then be ground into fine, medium and coarse
textures depending on the customer demand. Packaging of Roasted
Coffee To conserve freshness, aroma and flavor of both the
ground and ungrounded roasted beans, the coffee is then packed
in laminated aluminum foil packets immediately after roasting.
The packets have a de-gassing valve, which protects the coffee
from moisture and oxygen. Thus the packed coffee is able to
retain all the flavor, aroma and freshness for a long period. |
